This is my favorite recipe for parties. These mushrooms are awesome ambassadors of vegan cooking. The hearts of palm make a very good crab substitute because of their shredded texture, and the richness of the cashew cream will satisfy any omnivore. Our fish-less filet at Terri is based on this recipe, and none of the customers can believe it’s housemade.

1 cup Cashew Cream (page 226)

1 15-ounce can hearts of palm, finely chopped lengthwise

1 pinch cayenne

¼ teaspoon thyme

1 teaspoon Old Bay seasoning

25 cremini (baby bella) mushrooms, stems removed

2 tablespoons tamari to sprinkle on mushrooms (optional)
