banana ice cream

This dairy- and refined-sugar-free ice cream is not only nice to your taste buds but also to your wallet and waistline! The basic recipe requires only one ingredient, but my favorite version is chocolate peanut butter.

ICE CREAM:

2 bananas (I try to find Fair Trade bananas)

AND

2 tablespoons peanut butter (or nut butter of choice)

OR

2 tablespoons cocoa powder

OR

2 teaspoons instant coffee

2 tablespoons frozen berries

SUGGESTED TOPPINGS:

1 tablespoon cocoa nibs or shredded, unsweetened chocolate

1 tablespoon ground or slivered nuts (such as walnuts, almonds, or pecans)

1 tablespoon chia, flax, or hemp seeds

1 tablespoon sprouted, dehydrated grains (such as millet, buckwheat, or quinoa)

1 tablespoon shredded coconut, ...
