for 3 h, the aluminum surface is taken out, washed with phosphate buffer and tested by
DSC. The pH values and ion concentrations of milk are adjusted to 10 mM Tris-HCl at
pH 7.5, 100 mM NaCl, and 1 mM EDTA. Figure 17.4a shows the DSC curves of lead–tin
