33. Challenge cholesterol
There’s been lots of talk, maybe too much talk, about cholesterol and how bad it is. But the time has come to separate the fats. Why, because not all fats are bad.
OK, let’s have a quick science lesson. Fats provide energy, vitamins A, D and E, and also the essential fatty acids that the body cannot make for itself.
Cholesterol is required for cell membrane manufacture, the production of certain hormones and to assist in the digestive process. Around 25–33% of the cholesterol found within our bodies comes from the food that we eat. The remainder is made in the body when fats, particularly saturated fats, are converted by the liver into cholesterol.
