Developments in in-container retort technology: the Zinetec Shaka® process

Abstract:

This chapter covers the invention, development and commercialization of a novel in-container retorting system. The Shaka® process is one of the latest innovations in a long line stretching back to Appert. Shaka® retorts use vigorous horizontal agitation to mix the contents of the container and transfer heat rapidly from the surface throughout the contents which results in much faster sterilization than existing methods.
