Traditionally, accounting in the hotel business starts with a budget. A budget is a projection of income for a future time period, usually a calendar year. To understand the budgeting process for many catering and convention services (in full-service hotel properties), the prerequisite is to understand the hotel business as it relates to sales of group guest rooms.
