This chapter discusses the state-of-the-art and recent developments in quality management in food supply chains. Special emphasis is put on the regulatory framework of quality management the relationship between chain organization and quality management and recent attempts to improve chain-wide quality-related communication. These attempts include food law certification schemes and the use of IT and quality management techniques.
