A quick pulse in the food processor transforms raw cauliflower into rice-sized pieces that can replace regular rice in any dish. Ayurveda is extremely rice-based, so this is a great way to lighten the load with fewer carbohydrates and calories and more micronutrient-rich plants. Here are three of my favorite ways to prepare cauliflower rice, each with unique medicinal benefits. Eat your prescription!

cilantro lime (detoxifying and alkalizing)

MAKES 4 CUPS

1 head of cauliflower, cut into florets

1 tbsp sesame oil (Vata, Kapha) or coconut oil (Pitta)

12 yellow onion, diced

2 garlic cloves, minced

1 medium lime (zest and juice)

14 cup chopped fresh cilantro

12 tsp sea salt
