Lactic acid bacteria (LAB), which produce lactic acid as the main fermentation product, have received considerable attention as probiotics in recent years. LAB play an important role in maintaining the quality of fermented vegetables, milk, dairy products, wines, and meats and show great potential in biotechnological applications such as enzyme and vaccine delivery systems.
