Advances in freshness and safety indicators in food and beverage packaging

This chapter begins with an overview of the various principles behind commercially released freshness and safety indicators. These include time-temperature integrators and leak detectors that simply indicate risk, and sensor labels that offer direct assessment of safety and freshness (including fruit ripeness). Since this arena has been thoroughly reviewed recently, just a couple of leading examples of each category are described to set the scene for a discussion of why most of these inventions have not proved commercially successful.
