Water Kefir Recipes

Water kefir is a mildly bubbly and sweet soda-like fermented beverage. Its mother culture, originating in Mexico, is a colony of yeast and lactic-acid-producing bacteria called “water kefir grains”—much like the dairy kefir grains you’ll see in Chapter 12, except dairy-free. Submerge water kefir grains in sweetened water, where they consume the sugar and, in return, give all the great probiotic benefits of other ferments. This culture produces alcohol—usually less than 1%—and shorter fermentation times will keep the alcohol production lowest. Its basic taste is neutral and well suited to taking on fruit or other flavors in additional fermentations.
