Feta Feta

This is absolutely amazing and incredibly easy to make. I urge you to try to wait the full month while it ages. It’s worth it! If the feta falls apart during aging or storage, the blocks were too soft. If this happens, remove them from the brine and store them in the fridge or freezer. You’ll need to eat the blocks in the fridge within a few weeks. They’ll taste great but will lack somewhat in texture.
