Abstract

Numerous textbooks are available on sensory evaluation methods and consumer testing ideologies and protocols. This chapter will make reference to such texts rather than emulate them. The aim here is to discuss sensory and consumer science methodologies within the specific context of flavour evaluation and to provoke further thought over the future of sensory and consumer testing within the world of flavour.
