Foodborne cestodes

In this chapter we review the current knowledge on foodborne cestode parasites. The following parasites are dealt with: Taenia solium, Taenia saginata, Taenia asiatica, Echinococcus species causing cystic and alveolar echinococcosis, and Diphyllobothrium spp. For each parasite the following aspects are discussed: geographical distribution and prevalence, parasite biology and life cycle, epidemiology and risk factors, diagnosis, disease and treatment, and prevention and control.
