10.1 Introduction
Several biomolecules, such as amino acids, fatty acids, vitamins and minerals are essential to maintain the normal physiology of the body. Humans and animals are unable to synthesize all of them and, therefore, these biomolecules are strictly needed to be supplied with the diet. Most of the essential amino acids, fatty acids and vitamins are either lacking or completely missing in crops used for human food and animal feed, e.g. soybean is deficient in Vitamin D and methionine; chickpea is deficient in cysteine and lysine. For years, a number of people who suffered from generalized malnutrition were being tracked throughout the world, but only over the past decade, nutritionists have gathered evidence about the significance of malnutrition.
