Using natural antimicrobials to enhance the safety and quality of milk

Abstract

This chapter overviews current advances related to the addition of natural antimicrobials to milk products. It reviews the most important developments in using natural antimicrobials to enhance milk safety and quality, and discusses in detail the biological basis of the contribution of the phytochemicals studied, individually or combined with other food processing technologies.
