The bento dishes in this book do not require special equipment or cookware. You will only need a sharp knife, a vegetable peeler, a spatula, a baking sheet, a saucepan, and a skillet, which can be nonstick, cast iron, or stainless steel. If you use a stainless steel or cast-iron skillet, be sure that the pan and oil are properly heated before you start cooking. You may need a little extra oil on these surfaces to prevent sticking.
