EBS provides the ability to create storage volumes for block level access. These volumes can be created independently and attached to the EC2 instance. The EC2 instance can read and write data to this volume and stored persistently. In other words, the data stored on the EBS volume is not lost even after the instance is shut down.
In cases where the application needs to store persistent raw data for long term, EBS volume storage is best. Being block storage, the volumes are raw and unformatted.
