Application of HACCP
15.1 Introduction
Principle 1 of Hazard Analysis and Critical Control Point (HACCP) is hazard identification and analysis, and it is the most important task of the whole process. An inaccurate hazard analysis can only produce an inadequate HACCP plan. It requires technical expertise as well as scientific background in various domains for a proper identification of all potential hazards. Therefore, knowledge of food science and HACCP is essential for the development of the HACCP plan. Hazard analysis needs to identify all hazards that are significant and must be eliminated or reduced to an acceptable level in order to produce safe food for consumption.
