Abstract
Frying is an important processing operation in the food industry. Such processes range from the batch frying of French fries found in fast food restaurants worldwide to the continuous frying of a variety of shelf-stable snacks or refrigerated or frozen foods. The advent of computer simulation and improved physical and chemical modeling have significantly enhanced our capability to improve the design and execution of frying technology.
