CHAPTER 6:Soups and Salads

There’s a popular misconception that a low-carb diet is a “no vegetable” diet, but that couldn’t be further from the truth. In fact, I make a salad every single day, even if it’s just as a side dish. There’s no reason to avoid non-starchy vegetables such as broccoli, cauliflower, zucchini, and bell peppers, or fruits like avocado or berries. They’re high in micronutrients and low in carbs, and won’t impair your weight-loss efforts.

So don’t be afraid of fiber-rich foods, and don’t get obsessed with carbs or high ketone levels. You don’t need to follow a zero-carb diet unless you have a medical condition that requires such an extreme approach. Instead, rejoice in the healthy recipes for comforting, nutritious soups ...
