SAUERKRAUT, MADE WITH CABBAGE AND SALT, is the archetype of fermented vegetables. But cabbage is not the only vegetable that can be fermented, and salt is not the only seasoning that can be added to fermented vegetables. You can ferment other vegetables along with cabbage, without changing the proportion of vegetable to salt. You can ferment a vegetable mix containing little or no cabbage.
