JUST AS VEGETABLES AND FRUITS can be preserved, so can meats. And just as microbes can assist in preserving vegetables and fruits, so can they assist in preserving meats.

But as much as I encourage experimentation when fermenting vegetables, fruit, and beverages, I do not encourage it when preserving meats.
