1.2 History of Solid- State Fermentation
Although our ancestors did not know the science of SSF, they applied
SSF in daily life for many centuries, evidence even dating from thou-
sands of years ago.
e earliest SSF product is the natural wine that is produced by
SSF with fruits, honey, animal milk, etc. SSF was mainly referred to
as distiller fermentation in these cases. For example, yuanjiu, a Chinese
old natural wine, was the first drink fermented in a natural environ-
ment without any saccharifying agents. Wine- making equipments
