1.3.1.5 Oxygen Transfer in a Medium Oxygen transfer aims directly
at aerobic SSF. Microbial growth results in the formation of biomass
film on the solid surface, and the metabolized substrates agglomerate
and become viscous. Otherwise, high moisture and slimy substrates
will also affect oxygen transfer in the medium. In large- scale appli-
cations of SSF, aeration and agitation are utilized in order to avoid
the deficiency of oxygen in medium and promote microbial growth.
Aeration mainly fulfills four functions in SSF: (1) maintaining aer-
obic conditions; (2) desorbing carbon dioxide; (3) regulating the tem-
perature of substrates; and (4) regulating moisture content. Aeration
