of the qu block should keep a certain distance to facilitate
ventilation. Some manufacturers usually stack the blocks of
qu with 4 to 6 layers. In later periods of fermentation, the
distance could be reduced and made the block stacking more
closely for thermal insulation. Moreover, the blocks of qu also
could be placed on the wooden shelf.
