8.3.6.3 Aeration and Agitation (Stirring) during Fermentation e bio-
reac tor used for fermentation of red mold rice is an intermittently-
mixed, forcefully- aerated bio reac tor, each with overall dimensions of
6–9 m × 2–4 m × 0.6–1.0 m and a working capacity of about 10 t
(20% dry matter) in an industrial scale- up.
Aeration time and frequency depend on the temperature of fer-
menting rice. Usually during the period of 58–68 h after inoculation,
the temperature of the fermenting rice rises quickly. Accordingly, the
aeration runs frequently with an interval time of 1–2 min.
