Melon and Strawberry Salad with Midori Balsamic Vinaigrette

This salad of strawberries, melon, and grapes is best at the peak of all of the fruits’ ripeness. Choose strawberries that are fragrant and deep red in color and melons that have a fresh and fruity scent. The riper the melons and strawberries, the sweeter the salad.

1 pound (455 g) fresh strawberries, hulled and halved

1 peeled and cubed yellow-fleshed melon, such as canary or Crenshaw

1 cup (150 g) red or green grapes, halved Zest of 1 lime

¾ cup (150 g) granulated sugar

2 tablespoons (8 g) chiffonaded mint leaves

2 teaspoons minced crystallized ginger

2 teaspoons white balsamic vinegar

1 tablespoon (15 ml) extra-virgin olive oil
