Nutrients – what they do and how much you need
We all know nutrients are important, but what exactly are they? Basically any substances found in food or drink that are essential to health. There are two types. Macronutrients – protein, carbohydrate and fat. These provide energy (calories) and have specific roles in maintaining health. Micronutrients – vitamins and minerals (e.g. iron and calcium). They are equally important but are needed in smaller amounts.
Here we look at each nutrient in turn, giving a brief run-down on what it’s for, how much you need1 and where to find it.2 However, if you just want to know about good meals that contain all these nutrients in the right amount, go to pages 77–78.
