MOSS ships with a number of preconfigured workflows out-of-the-box. WSS ships with only one. Each workflow provides immediate value, and also serves as a sample for developers who need to create their own workflows.
The MOSS workflows are more interesting and a bit more relevant in a document scenario than the WSS workflow. However, the one WSS workflow is intriguing as it is fairly generic, though still quite useful across multiple scenarios.
