Soy beans are mini powerhouses, full of disease fighting nutrients. Tofu is made from soy and though it looks unexciting, cooked correctly it can be delicious – the key is marinating it before cooking. First, pour off the water it’s stored in and press with a clean tea towel until dry. Cut into cubes or strips, then marinate in 4 tablespoons of soy or sunflower oil, 4 tablespoons of lemon juice, 3 tablespoons of soy sauce, 2 teaspoons of honey and a tablespoon of grated ginger for an hour.
