Association colloids as delivery systems: principles and applications in the food and nutraceutical industries

Surface active molecules such as polar lipids and surfactants self-assemble into association colloids that include micelles, liquid crystals and microemulsions that are used to design delivery systems for nutraceuticals, vitamins and minerals.
