Good dialog editing is transparent. The goal is to change the performance or even the meaning of spoken words, but without ever sounding edited.
You can't edit pictures without understanding how an actor's arms, legs, and faces are supposed to move to express emotions or perform actions. If you're going to edit their voices, it's just as important to know their mouths combine noises to express words.
