Texas is famous for barbecue, particularly beef brisket that is cooked at low temperatures for a long time. The typical cooking time is 1.5 hours per pound of brisket. Because a typical brisket might be 12 pounds, we usually start a brisket the night before and let it cook overnight. When I first got my barbecue smoker, I decided to barbeque a brisket for a football party the next day. It was my first brisket, and I knew how long briskets could take. I still mistimed it. Because of the long cooking time, the brisket was literally not done until every last person had gone home. When it was done, it really was the best brisket I had ever eaten.
