As we write this book in late 2022, supply chains are still heavily disrupted by COVID-19-induced staff shortages, supply shortages, and port closures. A worldwide shortage of food starch, triggered partly by a shortage of propylene oxide necessary for starch production, coupled with transportation issues, caused innumerable downstream impacts; for example, see Figure 1.1.
