Create an initial full backup with tar:
tar -cvz /backup/full.tgz /home/user
Use find's -newer flag to determine what files have changed since the full backup was created, and create a new archive:
tar -czf day-`date +%j`.tgz `find /home/user -newer
/backup/full.tgz`
