Abstract:
Computer vision is a technology that allows the automation of visual inspection and measurement tasks using digital cameras and image analysis techniques. This chapter provides an introduction to various aspects of the application of computer vision technology in the food industry. The motivation for using computer vision techniques and the advantages that they offer are discussed, along with an overview of the various types of technology available and their uses in this field.
