It's worth its weight in gold, in terms of what it allows me to do.

Puedes pensar en las plantillas como una evolución de la carta formulario: "Estimado [Nombre]: lamentamos informarte de que ya nadie utiliza [Tecnología obsoleta], ¡pero el templado está vivo y coleando!". Para enviar esa carta a un montón de gente, sólo tienes que sustituir [Nombre] y [Tecnología obsoleta].

Este proceso de sustitución de campos a veces se denomina interpolación, que en este contexto no es más que una palabra elegante para "suministrar la información que falta".
Aunque las plantillas del lado del servidor están siendo rápidamente suplantadas por frameworks frontales como React, Angular y Vue, siguen teniendo aplicaciones, como la creación de correo electrónico HTML. Además, tanto Angular como Vue utilizan un enfoque similar al de las plantillas para escribir HTML, por lo que lo que aprendas sobre las plantillas del lado del servidor se trasladará a esos frameworks frontales.
