The \z command, as well as its synonym, \dp, display all privileges granted on tables, views, and sequences. If the Access privileges column is empty, it means default privileges, that is, all privileges are given to the owner (and the superusers, as always).
The \du command shows you the attributes and roles that have been granted to roles.
Both commands accept an optional name or pattern to restrict the display.
