All the bread, cakes, pastries, biscuits and pies we eat are made by bakers who work in three types of bakery – plant, in-store or craft. Plant bakeries are large food manufacturers, where most of the work is automated processes; it is the baker’s job to oversee these processes. In-store bakers working in the bakery departments of supermarkets use some automated processes, but do more hand preparation and finishing of some products. Craft bakers make products for local bakers’ shops, delicatessens and farmers’ markets. Craft bakers do more work by hand, and they may be closely involved in developing new products and trying out new recipes.
