7.5. PEF Treatment Variables

The process of PEF pasteurization is complex in the number of variables involved, which can generally be grouped into three categories: system, medium, and subject parameters. These parameters have been tested by several research groups. However, the varying conditions and equipment used by different groups means that not all results are in agreement, and comparisons between experiments may not always be valid. In some instances, it is possible to identify key characteristics of PEF processing and to observe some generally agreed-upon trends in the three variable divisions (Hodgins et al., 2002).
