16.6. Conclusions

Irradiation is a safe and effective process for controlling foodborne disease. One of the advantages of this technology is that it can be used for both fresh food items and packaged foods. The development of combined treatments using irradiation is a promising avenue because of the possibility of enhancing product safety and obtaining higher quality products. This is an avenue that offers opportunities to introduce new food products to the market. Combined treatments can also stimulate the synthesis of phenolic compounds and enhance vitamin content in some fruits and vegetables. More research is needed, however, to evaluate the mechanisms of action of each treatment on the main pathogens found in each type of food. More research ...
