Subscribers have no ability to do anything at all. They can only log in and edit their profile (adjust their first name, last name, password, biographical information, and so on), and that's it. Depending on the permissions set in Settings | Discussion, blog visitors may have to sign up as subscribers in order to be able to post comments. Also, there are some plugins that handle sending informational updates to subscribers, such as newsletters or email notifications of new posts.
