It's worth its weight in gold, in terms of what it allows me to do.

In global-scale stream processing including mobile devices and IoT with imperfect connectivity, the data you are processing will regularly arrive for processing in a different order than the order of the events that the data describes. Windowing, watermarks, and triggering together allow you to perform coherent aggregation over out of order data, and they tune your pipeline according to your latency requirements, your tolerance for incomplete data, and your willingness to pay for redundant computation.
