1 Draw a shape to apply a fill color and stroke color to it.
2 Open the Swatches panel from the Window menu. With the object selected, click on the stroke or fill icon in the upper left of the Swatches panel, then select a color.
3 Open the Properties panel from the Window menu. Here you can click on the fill or stroke color by clicking on the color thumbnail. You can also edit the stroke weight here (something you cannot do in the Swatches panel).
