photo- oxidation process, emulsication refers to the suspension of water molecules in the oil
molecules, resulting in water- in- oil emulsion. Due to this combination, a change occurs in the oil
properties, making the oil more viscous and even more persistent than the original form of the
oil. However, lighter oil containing water- soluble molecules can easily dissolve into the water. This
process is known as dissolution.
