When you create a new Illustrator document, one artboard is automatically created. Its dimensions are dictated by a preset in the document profile on which the new file is based. However, you have the option to change both the dimensions and number of artboards in the New Document dialog.
You can also create up to a total of 100 artboards manually in an existing document by clicking and dragging with the Artboard tool (
