When we want to achieve as realistic an environment as possible, we need to make sure our virtual objects interact with the physical objects as much as possible. Imagine you have a football and you drop it on the floor. What happens is that it will bounce and eventually roll away, especially when you drop it on a sloped surface.
The virtual football you might have created does no such thing. It will drop when we have gravity and keep on dropping, right to the center of the earth. But if we have spatial mapping, we can have the ball stop falling when it reaches the floor—have the ball bounce or roll off that sloped surface.
