When subdividing, Blender will add a Subdivide window underneath the Tool Shelf to help you further control the behavior. Just like Loop Cut and Slide, you can increase the number of cuts you make. In the window example, if I select the bottom and top edges, subdivide, and change Number of Cuts to 2, my face is divided into thirds:
