sophisticated and popular an item is, if it cannot be consistently replicated, it
is not suitable for franchising. Most ethnic menu and other elaborately pre-
pared menu items cannot be used successfully in franchised restaurants, no
matter how popular they are locally. The customers will know the difference,
and the trust will be lost. These types of items are more suitable for indepen-
dent restaurants. In addition to being exactly replicable, the other aspect that
should be considered is that the product can be prepared in large quantities.
